Tropical Pineapple Jello Shots Recipe

Tropical vibe goin’ on?

These Tropical Pineapple Jello Shots are sure to be a hit. They are sweet, but not too sweet. They have alcohol, but it’s not overpowering. The bright blue color is fabulous.

They are made using the basic concept of how I make all my jello shots – replacing the cold water called for in the instructions on the jello box with alcohol and/or other liquid.

WHAT YOU NEED

• 1 1/2 cups Water
• 1 large box Berry Blue Jello
• 1/2 cup Pineapple Juice + optional pineapple chunks
• 1/2 cup Blue Curacao Liqueur
• 1 cup Malibu Rum
• 24 2oz cups

WHAT TO DO

[1] boil WATER
Pour 1 1/2 cups water into saucepan. Place on stove over high heat. Bring to boil.

[2] add JELLO
Once the water is boiling, turn off the heat and pour in contents from the jello packet.

[3] STIR until dissolved
Using a fork or whisk, stir jello until it is dissolved – usually about a minute.

[4] add Pineapple Juice
Let cool just slightly, then pour in 1/2 cup of Pineapple Juice.

[5] add Blue Curacao
Next, add 1/2 cup of Blue Curacao.

[6] add Rum
Add 1 cup of Malibu Rum to jello mixture. Stir.

[7] POUR into cups
Pour mixture into small cups. I used 24 2 oz cups.

[8] REFRIGERATE until nearly firm
Place jello shots in the fridge until jello is almost firm.

[9] SOAK pineapple chunks in pineapple juice and rum
While jello is in the fridge firming up, place some pineapple chunks in a bowl. Cover pineapple with pineapple juice and rum.

[10] add PINEAPPLE
After about an hour, remove jello shots from fridge and place a pineapple chunk or two on top.

[11] REFRIGERATE until ready to serve
Place jello shots back in the fridge until ready to serve.

>>> Variations <<<

Variation 1: If you are not transporting the jello shots, you can slice a pineapple chunk and stick it right on the edge of the cup. Hint: this doesn’t work if you need to place a lid on the cup for stacking and transporting.

Variation 2: Instead of the pineapple, squirt a dollop of whip cream on top.
